  1. DD14 is still doing the bulk of the cooking with my hand out of commission. Last night she used the beef strips we cut off the roast. Stir fried them with some frozen stir fry veggies, a can each of water chestnuts, bamboo shoots, baby corn. Seasoned with a bottle of triple ginger teriyaki and served over rice noodles. It was great and easy. I am so lucky that she likes to cook and is so helpful. I have increased her allowance for being so much help during this chaos.
  2. I thawed a top round chuck roast 3.5lb cost around $12 when I bought it. DD14 has decided she likes cutting meat. She sharpened my knife then I told her how to cut. She sliced off 4 1/2" steaks. Then we cut the rest in half. Half was cut into strips and half was cubed. We packaged everything and returned to fridge. steaks were marinated in balsamic vinaigrette for about an hour then grilled. We served it with a can of lima beans, a carrot dish, and roasted potatoes. Steaks were very tender and good. Carrot dish was a huge hit and I loved the potatoes. Potatoes Wash and cube 6 potatoes. Cut half and onion into big dices. Mix with olive oil. Coat with a package of onion soup mix. Put on a cookie sheet. Sprinkle with paprika and Italian seasoning. Bake 450F 40m. Carrot dish 1 can carrots 1 can mushrooms 1/2 onion diced small 1.5 T butter large sprinkle Sazon Simmer 40m.
  3. Be sure to check your insurance. I have really good insurance because Dh works for the department of the Navy (civilian but ex army enlisted). It is the best according to every doctor I've ever seen. I get free meter and strips through livelongo through blue cross FEP. It pays 100% of everything: meter, strips, and sticks. I do not like the meter as much as some others I've had but everything is free so.....I use that. I'm hypoglycemic and tend to run in the 40s to 70s. The downside is livelongo reports everything online and tracks it so my BS is in some database somewhere. I decided that it was worth my privacy to be free. Make your own decision.
  4. Going to add that i always used the dough hook on my mixer to develop the gluten and i never had a problem.
  5. I was a vegetarian for several years back in the early 2000s. This was how I made seitan back then using the 1995 vegetarian times recipe. it is less fancy than the one above. I need to try wynchwood's because it sounds good. Seitan 7 1/2 c whole wheat flour 6 c water Stir water into flour. Knead 10m to develop gluten. Run under water about 10m while stretching dough to wash away starch and bran. Make a loaf, tie in cheesecloth, and boil in stock for 1h. Slice and serve or use as desired. *can add seasoning to stock or loaf as desired before boiling. This is a seitan loaf i served at a vegan thanksgiving around 04/06. I used a mushroom gravy on it. I ate it about 2x a month in various dishes for about 7 years with this recipe.
  6. Last night we had soup for dinner. No clue what is for dinner soup: 5p put pot on stove. Dig through freezer, find 1/3 bag potatoes obrien. Dump in pot. Dump in some garlic minced. Dice a bit of the leftover easter ham and add to pot. Add 6c water, 2 T chicken broth and turn on eye to medium. simmer 15m.. decide it needs something. Add 1 can drained spinach and some italian seasoning. simmer 25. Taste. Add 2 c heavy cream and turn to low for 15m. Serve with garlic bread. It was a big hit, everyone loved it.
  7. DH is a naval architect. He will not let me move anything unless he measured it at least 3 times. He doesn't seem to understand that it has to 'look good' as well as fit. Half our stuff has autocad dimensions of it. Also I am not allowed to hang anything or put anything together for reasons.
  8. Splint came off yesterday and I am in a removable brace now. I can wash my hand. I have limited movement in my fingers and can barely twitch my thumb. 6 weeks of physical therapy coming up. We stopped by Aldi on the way home. No longer carrying several things, not even shelf space for it: asian sauces, pancake on a stick, small cartons of heavy cream, some pasta sauce, rice items, certain bakery mixes,etc. I wasnt looking to buy all that i noticed, but i noticed.
  9. I'm in my 40s. I'm sandwich generation where I care for elders and kids. I think every age has its own issues and advantages. More experience is always welcome.
  10. i forgot to add that my brother has been a GM at a pizza place he's worked at close to 30 years now. he told me to buy a pizza cutter to cut all things. not the wheel type, but more like a boat shape. i havent tried it yet, but he said should solve my kitchen chopping problems.   11. scissors issue is to use fiskars and a rotary quilting blade. works like a charm. mine are the scrapbook type but they work on everything. i will admit to using my quilting blade to cut chicken the other day. seriously, once you get an actual titanium fiskars similar to the one below, you will never go back. i have several pair all over the house. very easy to squeeze.   12. DH takes gabapentin regularly and it helps a lot. DD18 was on it for a while because she had tics. It worked for her also. i am pro the neurontins. side effect vs results are worth it for us. i have rx voltaren gel and i like it. try a lidocane patch. otc 4% rx5%. i have the rx ones. i LOVE them, but they do best in larger flatter areas like back and knee. havent heard of aspirecream. will have to look it up.
  13. the drawer for my desk fell off, hit my bad hand. lots of pain yesterday. baby did not nap and acted like she found coffee. DD14 home on spring break so i had help. she is the kindest soul. yesterday i went to cook dinner of baked chicken. discovered i had thawed enough for a stirfry but not enough to bake. sighs. got out another pack moved menu up a day. decided to make a chicken casserole from my southern plate cookbook that id been wanting to try. got 80% done making it only to realize it had to marinate overnight. sigh. finished putting it together and stuck in fridge for next day. We ended up having soup and sandwiches. I was in such a bad mood and pain at this point that i got into an argument with my husband on the right way to slice bread. I had some vodka, pain went down, apologies were made and everyone ended on a good note as i went up to bed early.
  14. This is very useful for me right now. It is my dominant hand that is broken and everything is very hard. one of the most useful things is talk to text on my phone and computer. it's not perfect but it's good. in the shower i use a shampoo with a pump it works well. .same thing with soap i pump it onto a pouf and use that. i use foaming hand soap to wash my hand. shower sprayer ftw. i tend to keep good pump bottles. a lot of stuff in my house isnt what the bottle says it is. i keep a tote bag by me to move things from room to room.   15. i turned my sunroom into a pantry. i' agoraphobic so we dont have many people over.
  16. I like my spreadsheet. I put in the item i want to stock, how many i want, how many i have and poof: i can see what i need. my menus very, but mostly by spice. so is we eat a pound of chicken per meal 3x per week for 52 weeks... roughly 150 lb chicken. i may break that down into canned, frozen, nuggets, etc but i have a rough estimate on it. Same with veggies. lets say we eat 1 container per day stored. 365 containers. break that up into canned, frozen, dehydrated, pickled, etc. break it further by type. Now in an emergency we would eat more stored and less fresh. I have to decide how much more i want to keep on hand and add that to my list. Same process with tp, soap, medicine, lightbulbs. how many do i use in a week, month, year. that isnt even prepping..its just knowing how many to buy when the sales are good for annual budgeting. yes i am very, very OCD. and typing with only left hand so terrible grammar.
  17. I usually use half butter, half crisco and crumb it in the mixer. I dont think I've tried oil. what is the ratio?
  18. homemade noodles are great! Chinese noodles like pulled noodles are simple, and rice noodles are a good alternative to wheat.   20. I saw someone making sausage oat patties. We did the vegetarian thing for a few years decades back. This is what i made instead of sausage: 100 Calorie Chickpea patties 30 oz cooked, drained chickpeas 1/2 c cooking liquid 1 1/2 c oats 1 clove garlic salt & pepper Process chickpeas and liquid to paste. Process oats to powder and mix all. Shape into 12 patties. Grease pan and patties. Bake 350F 15m. Flip. Bake 15m. Freezes very well. They are a good substitute texture wise. You can fry them in meat grease for added flavor. Seasonings are highly adjustable and I usually vary it to what else i am cooking.
  21. I actually hate Tabasco sauce because I dont like tobacco peppers. They are all heat and I want some flavor. I prefer cayenne pepper based sauce. Same or more heat, lots of flavor. The brand I can get here is Louisiana. When I lived in MS, there were always several brands to choose from. I do have a strong preference for lee and perrins, but will use something else depending on budget. campbells is 1.25 a can. Aldi is .48 a can. I but aldi. im just going to doctor it anyway and i dont taste a difference. sometimes i even make up a batch 'cream soup mix' and use that. DH has an issue about saltine crackers and they have to be Premium brand. Lipton diet green tea citrus. there is no substitute. i like the flavor, it is low calorie, non carbonated, and stays down. cough drops prefer ricola, but will use halls. DH is super picky about hygiene products and everything is very specific. Cat likes purina cat chow in blue bag. tried lots, he likes that. he is a sweet baby and gets what he wants. cat tax:
  22. I rarely buy named brands. There are a handful of things where i prefer a brand taste, but not many. A1, Margaret holms green beans. Somethings i actively prefer the store brand. I use a lot of store coupons from Kroger, Food Lion, and BJs. I get several things from aldis. I try and stock up when things go on sale. Some things we get from the Indian or Chinese grocery.
  23. DD25, DD13, DD1. My heart overflows with joy. The best moments in life are the simplest. Daughter of my loins and daughter of my heart. They are mine.
  24. Had wrist surgery yesterday. 2 bones and nerve release at wrist and elbow. Nerve block at shoulder hasnt worn off so my entire arm just flops around like a dead fish if i shift wrong. Im hoping it wears off soon. DD13 is going to skip school today to help me. DD25 is going to be here this evening to visit. They are just passing through though so she is leaving later tonight. I see soup in my future.
  25. My best kitchen hack is S hooks. gloves with binder clips and s hooks, all types of dishware. grill stuff, kneading bags, clothes pins, anything.
