Peg Posted March 18, 2008 Share Posted March 18, 2008 Is it possilble to can pumpkin safely? According to the UW-extension office "you can't do that." I asked my mom and she had no idea either. I don't want to do anything fancy, just plain old mashed pumpkin in a jar. Link to comment

Andrea Posted March 18, 2008 Share Posted March 18, 2008 Pumpkin becomes too dense if you mash it but according to the Ball book, you can pressure can it if it is cubed. Personally, I grow it, bake it, mash it, then drain it overnight. Then, I freeze it in two cup increments in quart size freezer bags. These stack flat in my freezer and take up very little room. But then, we don't use an enormous amount of pumpkin. The 8 - 12 cups that I freeze each winter more than last us through until the next pumpkins ripen. Link to comment

Ambergris Posted March 28, 2008 Share Posted March 28, 2008 We have squash vine borers to take care of all our pumpkin problems long before they hit the kitchen! We also have butternut squash, which are much easier to deal with, and which stay good for months just set on the shelf. Link to comment
