  1. Use at Your Own Risk: Don't know what Violet will say, can't remember where I got this recipe. DS and I tried it, and they are good. Canned Chili Beans 2 lbs dried kidney beans-cooked 2 small cans tomato paste 3 T chili powder 1 T salt 2 T onion powder 2 T garlic powder Add rest of ingredients to cooked kidney beans, and process according to BBB for kidney beans.
  2. I've tried the homemade freezer waffles, but mine never seem to turn out right. It has been a long time, but I am thinking they were limp. Any tricks?
  3. DD came over this morning and we canned 25 pints of baby carrots and 8 quarts of ground beef. I am so happy when she wants to can with me. Of course, the carrots and ground beef were both on sale.

  5. 18 pints of baby carrots. Yes, I bought them, 39 cents a pound. Couldn't pass them up. Besides, we just cannot grow them here in the rocks, and no luck in a container.
  6. Virginia, Sorry about the black rot. Have you thought about apple pie jam and also apple pie filling ? It is good with green apples. Violet, we don't eat much jam, I'll have to look up that apple pie filling. Thanks
  7. Applesauce and more applesauce. We had to strip DF's trees, since they apparently have Black Rot. It is about a month early, but we do not want to lose the whole crop. More sugar is required with green apples, but at least we will have plenty of sauce. Of course, this is the year he had a bumper crop.

  9. I have a DB and DS, both over 60, and they are pretty much meat and potatoes (and desserts) type people. Beans are not even accepted very often. We have given up on trying to get them to try things. They will say, O I like green beans (or whatever) I just don't want any, etc. However, they don't get tired of eating the same things over and over. DS could eat a peanut butter sandwich everyday of her life, DB probably could,too. So the rest of the family when we get together cooks what we all like, and let them pick from it. Of course, they get more than their share of the meat and potatoes, but we just live with it. Since your DH is getting tired of it, I like what C4C did to get her's to branch out.
  10. Actually, I never got around to making this cake, but how bad could it be. Over the coals would work I would think, but Westie, you are the expert. Hope the boys (and all) enjoy. Don't think I can make it over there, but we'll see. Have fun.
  11. No egg cake recipe: Dutch Oven Black Forest Cake 2 cans Cherry Pie Filling 1 butter recipe fudge cake mix 1 12 oz can Coke or Sprite Spray dutch oven with cooking spray. Pour pie filling in. Sprinkle dry cake mix over pie filling. Pour soda over cake mix. Don't stir. Cook 400 deg for 40-45 minutes.

  17. I have never heard of this test, but it is good to know. Welcome, I once lived in Mississippi.
  18. This week I used a yellow cake mix that expired in 2005. I did not bake as usual, but used as the topping on a Pumpkin Crunch, so it did not need to rise, but it tasted fine, and we are all still living. I did a dry taste test before using. It passed the smell and taste test, so I used it.

  20. Just made a quick trip to WM for DGD, passed the canning isle. I have never seen so many jars, lids, etc. any place before. They must have 5 or 6 times the amount they usually carry. Almost a whole isle of canning supplies.
  21. I have done it, and it is OK. Potatoes are never as good as fresh, IMHO, but still good for a change.
  22. I have old Mirro, Sears, Presto, and was given an old AA. I like them all, and have no problems with them, except for the gasket wearing out. Like Darlene, the old Presto (my grandmother's) had a broken handle and my Daddy made a wooden one.
  23. I can chicken in broth all the time, and generally we heat it with noodles and such. However, on occasion we eat it just from the jar on sandwiches. I am very careful to can according to the newer charts and cannot recommend that others eat without heating, but we have never had a problem. I don't know of anyone that ever had a problem with home canned foods. My grandmother, mother and aunt all canned for years and I have done it since a girl with one or the other of them, so at 63 I have a lot of years under my belt. Still better safe than sorry. Quite a few recalls of commercially processed stuff lately. My family particularly likes a taco soup I can now, always canning at the longest processing time for the ground beef in the soup, and corn, which is also a long canning time.
  24. My family has canned this recipe for years with great success. However, since coming here and reading all the stuff out now about flour in canning, I have decided not to do it anymore. Family is kinda sad. I still have the Blue Book that it is in.
