Maybe I should try pink grapefruit. I just substitute the rind and juice of the fruit I want it to be. Yummy!!! It truly melts in your mouth. Link to comment
Safety Lady 2 Posted October 19, 2006 Share Posted October 19, 2006 One of my favorite recipes. I found this one on another site. Made a large batch yesterday for my youth group and they all went. Caramel crackers "cookies" In a nine inch pan: Line with parchmet and butter. Place soda crackers on bottom. Touching is ok. In a sauce pan bring to boil 1 cup butter (I used Imperial and two tablespoons butter) and 1 cup brown sugar. Boil for 3 minutes. Heat oven to 400 degrees. Pour caramel mix over crackers and bake 5 minutes. Top with chocolate chips to cover. I didn't have any chocolate chips (I know that is a sin). Spread over caramel. You can add nuts to taste. Variations: Use crushed pretzels, chopped peanuts, or whatever. Taste like a take 5 bar. The kids and adult helpers almost fought over the pan. It was scraped clean. Link to comment
westbrook Posted October 30, 2006 Share Posted October 30, 2006 Quick Halloween Cookies buy 1 roll pre-made sugar cookies Z small bag of almond slivers 1 small paint brush 1 red food coloring slice cookie dough and roll into finger shapes (little log rolls) place the almond sliver on the top of one end to resemble a finger nail paint the red dye on the almond bake according to package. Lilly Posted November 10, 2006 Share Posted November 10, 2006 White Chip Dream Cookies 2 1/4 cups all purpose flour 3/4 tsp. baking soda 1 cup butter 1/2 cup granulated sugar 1/2 cup firmly packed brown sugar 1 large egg 2 tsp. grated orange peel 1 package white chocolate chips 2 squares baking chocolate Preheat oven to 350 degrees. Grese two large cookie sheets. Combine flour, baking soda and salt in bowl. Cream butter and sugars together in large bowl. Beat in egg and orange peel. With mixer at low speed beat in dry ingridents. Drop with cookie scoop. Bake 10 to 12 minutes. Cool. Drizzle with dark chocolate. I use a pastry bag to drizzle the chocolate with. Link to comment

I've never been able to make Oatmeal Cookies, usually they spread out and just sit on the pan. These were so good I had to make 2 more batches to have enough to send out. The dough is really crumby, and the cookies are really ugly. The reason they are ugly is cause you have to pick up a handfull of dough and smash it into some semblance of a ball and then get it on the cookie sheet before it crumbles away. UGLY OATMEAL COOKIES 3/4 c. firmly packed brown sugar 1/2 c. granulated sugar 1 egg 1 stick butter 1 tsp. vanilla 1 1/2 c. all purpose flour 1 tsp. baking soda 1 tsp. salt (opt.) 2 c. Quaker Oats (quick or old fashioned, uncooked) 2 c. raisins Preheat oven to 375 degrees. Beat together butter and sugars until light and fluffy. Beat in egg and vanilla. Combine flour, baking soda, salt and spices; add to butter mixture, mixing well. Stir in oats. Drop by rounded tablespoonfuls onto ungreased cookie sheet. Bake 8 to 9 minutes for a chewy cookie, 10 to 11 minutes for a crisp cookie. Cool 1 minute on cookie sheet; remove to wire cooling rack. Store in tightly covered container. 4 1/2 dozen. Crazy4Canning Posted December 24, 2008 Share Posted December 24, 2008 Here are a two of mine - fussy, but worth it: Best Ever Chocolate Chip Cookies 1 C butter 2/3 C brown sugar 1 1/3 C white sugar 2 tsp vanilla 2 lg eggs 3 C flour 1 tsp baking powder 1 tsp salt 12 oz chocolate chips 2 C walnuts, chopped Cream butter and sugars until fluffy. Add vanilla and eggs. Add flour, b.powder and salt. Stir in chips and nuts. Bake on parchment or silpat 325 for 12 or so min. These will be tender, crisp on the edges, gooey in the center. You can re-use the parchment for the whole batch. Let sit for a few minutes, then remove to rack for cooling. MUST HAVE MILK on hand. These have been rumored to bring a grown man to his knees, begging for MORE! ~ ~ ~ ~ ~ Oatmeal Raisin Cookies 1 1/2 C flour 1/2 tsp baking powder 1/2 tsp salt 1/4 tsp cinnamon (nutmeg or pumpkin pie spice) 2 sticks butter 1 C brown sugar 1 C white sugar 2 eggs 3 C old fashioned rolled oats (NOT instant) 1 1/2 C raisins 1 C nuts Whisk flour, b powder, salt and cinnamon together. Set aside. Cream butter and sugars together. Add eggs one at a time. Add raisins and nuts to flour mixture and toss well to separate and coat raisins. Add this to batter. Gently add in oats. Stir until well mixed. Set racks to mid-upper positions, 325 oven 22-25 min, switch racks half way through baking. Cool on sheets for 10 minutes, then move to racks. This dough can be frozen. Take from freezer and bake at 300 for 30-35 minutes. You can remove raisins and add dried cherries or crans/pecans. VERY good recipe. Link to comment
Leah Posted December 24, 2008 Share Posted December 24, 2008 Baking Stephanie's cookies... I used a cup of maraschino cherries, chopped, instead of the chips and coconut. It was a nice texture dough, we made 48 balls - or would have if folks hadn't kept stealing the dough as they went by! They smell divine! ------- edited to add: The tops crinkled, with a slight pinkish tinge from the cherries. Needed to sit for a few seconds on the cookie sheet before trying to remove them. They are yummy; rather like brownies. I think they would be good as bar cookies. The texture was like a bar cookie, not like a cake. Will definitely bake again - thanks Stephanie! Link to comment
