Where is the canning green tomatoes recipe hiding?

I'm sorry... I took a quick look at my files, too, and couldn't locate it *quickly*. If you can wait until tonight (unless someone else finds it first), I'll look more closely after work.

 

I was in meetings & training all day yesterday. Who knew Kindergarteners were so much *WORK*?!!

I know there are older ones, too, but this will get you started...

 

I love dealing with the Kindergarteners, but the paperwork and record-keeping for the school system is overwhelmimg. I'm a perfectionist, and I want to do things *right*, so I wear myself out trying to figure everything out and do it right... and I'm "right pooped out"!

i have a lot of green tomatos. what do you do with the green tomatos when you use them?

Tomato Preserves

Yield: about 6 half-pints

1 1/2 quarts small yellow, green or red tomatoes (about 2 pounds)
1 tablespoon mixed pickling spices
1 (1/2-inch) piece fresh ginger

1 cup thinly sliced and seeded lemon (about 2 medium)
3/4 cup water

Wash and peel tomatoes; drain. Tie spices and fresh ginger in a spice bag.

15 minutes. Add tomatoes; cook gently until tomatoes become transparent,
stirring frequently to prevent sticking. Remove from heat. Cover and let
stand 12 to 18 hours in a cool place. Remove spice bag. Remove tomatoes
and lemon from syrup and set aside. Boil syrup 3 minutes or longer to thicken.
Return tomatoes and lemon to syrup; boil 1 minute. Remove from heat. Skim
foam if necessary. Ladle hot preserves into hot jars, leaving 1/4 inch head space.
Wipe rims, adjust two piece caps. Process 20 minutes in boiling-water canner.
(Adjust time for your altitude.)

Altitude in Feet----------Increase Processing Time

1,001 to 3,000-------------5 Minutes
3,001 to 6,000------------10 Minutes
6,001 to 8,000------------15 Minutes
8,001 to 10,000-----------20 Minutes



When I made them I used green tomatoes, and not just small ones.
I chopped the tomatoes so they'd be in chunks. (Easier to spread on bread that way.)

My MIL used to make a green tomato mincemeat. Very good in tiny pies at Christmas.

canned tomatoes... but they are green... sliced thick with just a dash of salt in pint jars and then water bath 25 minutes... I tried this last year... and got a jar out at Thanksgiving... oh they stayed firm and held their taste... sure was good tasting! Fried green tomatoes in the winter

Hi Quilty!

 

I bought a 1/2 bushel box of green tomatoes this morning and want to can them for fried green tomatoes. How thick did you slice them? Could they be done in quart jars? Do I need to add any lemon juice...How much, if so?

 

I was so excited when I saw this recipe! My chicks love them fried! Thank you!

I cut mine about a half an inch or better... they hold their firmness if they are thicker. I put mine in pints because there is only 2 of us... if you have a bunch in your house, you could can them in quarts. I didn't add any lemon juice to mine and they turned out great from last year. I just cut them, stacked them into the jars... added a little salt, and then filled them with hot water... put the hot lids and rings on and then processed them like I posted above.... hope it helps and good canning to you!

Oh well duh me...thanks for finding that Cat!

 

As an aside to my duh...we used a jar the other night at dinner that was 1 1/2 years old...the tomatoes still tasted like they came right out of the garden and still hold their firmness pretty well.
