  3. For Thanksgiving we always have the traditional Turkey, and a ham, dressing, mashed potatoes, a sweet potato dish, and several veggies, and of course more than enough desserts. Here are a couple of my favorite recipes..... ORANGE GLAZED SWEET POTATOES 6 SWEET POTATOES 3/4 CUP BOILING WATER 1 TSP.SALT 3 TBSP. BUTTER 1/2TBSP. ORANGE ZEST 1 TBSP. ORANGE JUICE 3/4 CUP LIGHT CORN SYRUP 1/4 CUP PACKED BROWN SUGAR RAISINS (OPTIONAL) 1 CUP PECAN HALVES SLICE SWEET POTATOES/ COMBINE PEEL, JUICE, CORN SYRUP, AND BROWN SUGAR. ADD SWEET POTATOES, BOILING WATER, AND SALT TO A LARGE SAUCEPAN. SIMMER, COVERED, UNTIL TENDER; THIS SHOULD TAKE ABOUT 15 MINUTES. DRAIN OFF LIQUID.LEAVING 1/4 CUP IN SKILLET. DOT POTATOES WITH BUTTER OR MARGARINE. POUR ORANGE JUICE MIXTURE OVER POTATOES. COOK, UNCOVERED,OVER LOW HEAT UNTIL GLAZED, AN ADDITIONAL 15 MINUTES. BASTE OFTEN AND TURN ONCE WHILE COOKING. MAKES 6 SERVINGS... ****ROAST PECANS AND SPRINKLE ONTO POTATOES BEFORE SERVING*** SQUASH CASSEROLE 6CUPS YELLOW SQUASH ( CAN BE 1/2 AND 1/2 YELLOW AND ZUCCHINI) 2TBSP. VEGETABLE OIL 1 BUNCH OF GREEN ONIONS, (CHOPPED) 4 TBSP. BUTTER 1/2 CUP SOUR CREAM 1 TSP. HOUSE SEASONING (RECIPE FOLLOWS) 1 CUP GRATED CHEDDAR CHEESE 1 CUP. CRUSHED RITZ CRACKERS PLACE VEGETABLE OIL IN SKILLET, ADD SQUASH,(I ADD A LITTLE WATER TO MINE, ABOUT 1/4 CUP) COOK UNTIL SQUASH IS TENDER. IN SECOND SKILLET ADD BUTTER AND SAUTEE GREEN ONIONS UNTIL TENDER. WHEN ONIONS ARE TENDER, POUR THEM OVER INTO SKILLET WITH SQUASH, THEN ADD SOUR CREAM AND HOUSE SEASONING, MIX UNTIL WELL BLENDED. IN A GREASED CASSEROLE, POUR SQUASH INTO DISH, TOP WITH RITZ CRACKERS, AND CHEDDAR CHEESE, PLACE IN A 350* OVEN UNTIL CHEESE IS MELTED. ______ HOUSE SEASONING GARLIC POWDER SALT PEPPER SEASON SALT ____ ASPARAGUS AND PROSCIUTTO 2 POUNDS ASPARAGUS( HALF GREEN/ HALF WHITE) 1 TSP. SALT 2 TBSP. BUTTER 2 TBSP. OLIVE OIL 1/4 POUND PROSCIUTTO, CHOPPED GRATED RICOTTA SALADA BRING LARGE POT OF WATER TO A BOIL AND ADD SALT. ADD ASPARAGUS AND COOK UNCOVERED UNTIL KNIFE IS EASILY INSERTED. THEN DRAIN ASPARAGUS. IN A LARGE SKILLET HEAT BUTTER AND OIL. ADD PROSCIUTTO AND FRY UNTIL IT BEGINS TO CRISP. ADD ASPARAGUS AND HEAT THROUGH. TRANSFER ASPARAGUS AND PROSCIUTTO TO SERVING PLATTER AND SPRINKLE WITH CHEESE. ______ SAVANNAH BOW TIES 1 SHEET OF PUFF PASTRY 1/2 CUP ALMOND PASTE 1 EGG YOLK, WHITE RESERVED 1/4 CUP BROWN SUGAR 2 TEASPOONS MILK 1 EGG WHITE SUGAR , FOR SPRINKLING CHOCOLATE DIPPING SAUCE, RECIPE FOLLOWS LET PASTRY STAND AT ROOM TEMPERATURE FOR 20 MINUTES OR UNTIL EASY TO ROLL. UNFOLD PASTRY ON A LIGHTLY FLOURED SURFACE. ROLL INTO A 14-INCH SQUARE. CUT SQUARE IN HALF WITH A FLUTED PASTRY WHEEL (PIZZA CUTTER). PREHEAT OVEN TO 400* DEGREES. FOR FILLING: CRUMBLE ALMOND PASTE IN A SMALL MIXING BOWL. ADD EGG YOLK, BROWN SUGAR, AND MILK. BEAT WITH AN ELECTRIC MIXER ON MEDIUM SPEED UNTIL WELL MIXED. SPREAD FILLING OVER 1 PASTRY HALF. PLACE REMAINING PASTRY HALF ON TOP OF FILLING. USING FLUTED PASTRY WHEEL, CUT DOUGH CROSSWISE INTO FOURTEEN 1- INCH WIDE STRIPS. THEN CUT EACH STRIP IN HALF CROSSWISE TO MAKE 28 PIECES. TWIST EACH PIECE TWICE. PLACE TWISTS ABOUT 2 INCHES APART ON COOKIE SHEETS LINED WITH FOIL OR PARCHMENT PAPER. BRUSH TWISTS WITH SLIGHTLY BEATEN EGG WHITE. SPRINKLE WITH SUGAR. BAKE FOR 12 TO 15 MINUTES OR UNTIL GOLDEN BROWN. TRANSFER TO WIRE RACKS TO COOL. SERVE WITH CHOCOLATE DIPPING SAUCE. *** ALMOND FILLING WILL BE VERY STIFF. TO MAKE SPREADING EASIER, DROP A DOLLOP OF FILLING UNIFORMLY OVER PASTRY, SPRAY A PIECE OF WAX PAPER WITH NON STICK SPRAY, PRESS ALMOND PASTE EVENLY OVER ENTIRE DOUGH WITH ROLLING PIN. ****** CHOCOLATE DIPPING SAUCE 3/4 CUP SUGAR 2 TBSP. CORNSTARCH 1/4TSP. SALT 6 (1.5 OZ.) MILK CHOCOLATE BARS 2 CUPS WHIPPING CREAM 1 EGG YOLK, BEATEN 1/2 TSP. VANILLA STIR TOGETHER IN SAUCEPAN SUGAR, CORNSTARCH, AND SALT. CRUMBLE CANDY BARS IN 1 AT A TIME. GRADUALLY STIR IN CREAM. COOK AND STIR IN MEDIUM HEAT UNTIL CHOCOLATE IS MELTED. TEMPER EGG YOLK WITH 1/2 CUP OF HOT SAUCE. ADD BACK TO POT AND COOK AND STIR UNTIL MIXTURE COMES TO A BOIL. REMOVE FROM HEAT. STIR IN VANILLA AND POUR INTO A SERVING BOWL. ANY REMAINING SAUCE CAN BE POURED INTO CUSTARD CUPS, REFRIGERATED AND SERVED AS PUDDING..... OK, THAT IS JUST A FEW OF MY FAVORITES NOW SOMEONE ELSES TURN WHAT ARE YOUR FAVORITE RECIPES????/

We had our fall festival at school last night, wasn't too much cleaning up to do, seeing everyone kept their own booths clean and then really started taking everything and putting it up as they got through with it, But it did get pretty windy and chilly out. We had a local church donate booths for the festival, the local fire department participated and had hay rides and the moonwalk balloon, and plenty of food and prizes, Lee College here in Cleveland require their students to do community service, so many hours every year, so as part of their community service several of the college students volunteered to help with the festival, they ran the booths for us. Thought that was really great, we had a really good turn out. I am proud for such a small country school. But next year we are going to plan it for earlier in October and not on the night that Tennessee plays Alabama,,,, MIL and SFIL came by for breakfast this morning on their way to church. So I am now cleaning up dishes and getting dinner started and doing the everblasted
  8. My brothers, uncles, nephews and my dad are(were) all avid deer hunters. They usually stick around Prentice Cooper, and in the Tennessee mountains. They usually just freeze their meat, but from time to time, they will bring the meat to me and my dh for us to make venison jerky for them. We have a commercial smoker,(southern pride), we used to run the barbeque circuit, and we throw it on there for them and make up a big batch. This smoker holds up to 500lbs of meat at at time.

  11. A quick good morning to everyone, I have got to get the house straightened up and figure out what is for dinner. We have to be at the school by 3:00 for the fall festival. and then we are on the clean up committee, so will have to stay a little longer till we get it all straightened up. Hopefully the rain will hold off, but doesn't look like. The festival is outside on the playground!.... This is being compared to the little ice age for the year 2010.

SINCE WE ARE TALKING ABOUT THE FLU, CLICK OVER TO WINTER PREDICTIONS 2004-2005 2 AND READ THE NEW POST I MADE THIS AFTERNOON, CONCERNING THIS WINTER AND NEXT... DOESN'T SOUND GOOD!!!!!! YOU MAY NEED TO DO SOME MAJOR STOCKING IN THE COLD AND FLU DEPARTMENT!!!!!
  14. The sudafed plugins should be available in most stores,(especially walmart), look for them where sudafed products are located or where the vapor rubs are.... they have been advertising this over television for the past two weeks..
  15. Well, I don't usually take the flu shot, so the shortage isn't worrying me, but the fact that there will be so many out there with the flu this year... I am prepared for that also! I have stocked up for the cold and flu season, for both ends
  16. Well back hard at work on the puter, I found the Merle Haggard Tune I was looking for, found the lyrics and name of album, now to find out where to purchase the song or download it. This tune has just kind of fell off the face of the earth, but finally found it on mp3.com. So will shell out some money to download this for SFIL,,,don't think he worth so much effort
  17. It was a Merle Haggard tune, it was released with two different titles, DOWNTOWN MODESTO, and MAKEUP AND FADED BLUE JEANS!!!!! When comes to looking up things on the internet, I will not stop until I find what I am looking for, It is like a challenge for me...It may take me a few days, but usually find what I am looking for..

  20. Glad your feeling better They'd. Hate seeing you so down.... But we all understand, we have all been there,as a matter of fact I am scrapping up change right now for the kids lunches for the rest of the week, Dh didn't even get a paycheck this week, because of the bad weather. We paid all the bills out of our savings account. Don't want to get into that anymore than necessary. Isn't that much there, but still don't won't to blow it... We woke up to severe storms this morning, we all got up around 7 am. then decided crap it, and all went back to bed and slept until 9:00 am. (unusual in this house hold). But it was so dreary and bad and no one had anywhere to go today, so we slept in. Then got up fixed breakfast, cleaned up the kitchen and finished drying my chives, and did a load of We also had to work on the phone lines all day, we couldn't get our phone to work, one of the dogs got up under the house and chewed the line. That dog is fixing to leave here if she doesn't stop chewing everything up.... Everybody have a good evening and take care...
