You are putting yourself and family at risk for botulism. I would never risk using a water bath for low acid foods. You cannot destroy botulism at boiling water temps of 212 degrees, it take a higher temperature, only possible to obtain in a pressure canner.

Foodborne botulism is due to ingestion of a toxin formed in food. One of the most common culprits in foodborne botulism is home canned foods, especially low-acid foods such as asparagus, corn, green beans, lima beans, mushrooms, peppers, sauces, soups, meats, fish and poultry. More than 90 percent of foodborne botulism outbreaks between 1976 and 1985 were due to home-processed foods.

If low-acid food is processed in a water bath canner, botulinum spores on the food will survive. In the absence of air, a condition found inside a jar after processing, the spores become living bacteria. As the bacteria grow, they form toxin. Eating even a drop of this potent toxin can be fatal to humans and animals.

I Zzelle is asking for the threads about getting a pressure canner for less money.

Oh yeah, I forgot....I was looking for the post where Darlene was having the drawing for used pressure canners. Can't find it???

 

Anywho-Darlene, are you still doing this? Maybe Zzelle could request her name be thrown in there, too, and taken out if she finds one before she wins one.
