Violet Posted January 6, 2007 Share Posted January 6, 2007 You are putting yourself and family at risk for botulism. I would never risk using a water bath for low acid foods. You cannot destroy botulism at boiling water temps of 212 degrees, it take a higher temperature, only possible to obtain in a pressure canner. http://hgic.clemson.edu/factsheets/HGIC3680.htm Foodborne botulism is due to ingestion of a toxin formed in food. One of the most common culprits in foodborne botulism is home canned foods, especially low-acid foods such as asparagus, corn, green beans, lima beans, mushrooms, peppers, sauces, soups, meats, fish and poultry. In the absence of air, a condition found inside a jar after processing, the spores become living bacteria. As the bacteria grow, they form toxin.
