Using a lid conserves heat, keeps the liquid from boiling away as steam, and keeps it from splattering. I wouldn't go spraying contaminated water around though. Link to comment

That is one way to know you will have good water. I think I have a few quarts of water right now on the shelf because I needed to add a jar of something to the canner. Link to comment
