Amishway, we planted the earlyserve one year and they were the best green beans we ever planted. However, we cannot find the seed here, I am so glad you posted where you got them. They put on fast, and then kept bearing. They were tender and crisp. Down here, we replanted in Sept, and got another crop before our first bad frost. I am going to order some today.

I did 5 pints of blueberry jam today. Gonna get another flat of berries tomorrow and do up some more! YUM!

 

And I did 7 more pints yesterday! Too hot today & the Monkeys wanted (ie badgerd me until I caved in) to go fishing. So perhaps tomorrow I can eek another 3-4 pts out of the 7 boxes of berries I have left.

 

I am really liking using the Pomona's Universal Pectin, though it is not cheap. It works with calcium water instead of mountains of sugar, so I can make low sugar jams for DH who is diabetic.

I also use Pomona's since I am diabetic. It is cheaper from Pomonas in bulk, but it is a big expense to invest in it. It is so good since it doesn't have a shelf life like other commercial pectins do. Good storage item for sure.

Me, I am not canning, just teaching others to preserve foods now.

Sorry, can't find them online? we got them from a seed rack at our hardware store - hope they get them again next year?

we plan to try and save some for seed and hope they stay true.

I haven't been able to get online for a month or so, so I spent the whole morning flipping through posts! Y'all are driving me CRAZY with hunger. And the canner's porn....LOL

 

Couple questions though--

 

Violet, how did your potatoes with the pickle crisp come out?

*looks nervously out the window at the potato plants waving greenly in the breeze* I wonder just how much is out there...

 

Best ideas for canning green beans?

I think I'm gonna have an over-abundance of those too, and I hate to do just plain ole green beans all the time.

 

Am thinking that I'm probably getting another canner in couple weeks--something deeper so I can do more than 5-6 pints at a time. I think the Weaver's here has either a Mirro or Presto 23 qt canner, double-stacker type, for around $100. Anybody have opinions either way?

 

And just to prove that I've been doing something--so far this summer I've put up strawberry jam, strawberry/raspberry jam, and done veggie and chicken broth! WHOO! Now I just need to get over my canning-meat-fear, and I can start doing chicken and hamburger.... :huh:

 

OH! One last thing--anybody have ideas for red raspberries (besides just the usual jam)?

Hi, Mish !

The Presto 23 quart is a great canner. I use 2 of them myself. Saves lots of time stacking the jars. I highly recommend them, but get the 3 piece weight set and use as a weighted gauge canner. That way you don't have to worry with getting the dial gauge tested. It needs to be tested new, right out of the box because they are often bad.

Crazy and I were told by the lady that runs the dept. in a store we taught at that Mirro parts are going to be difficult to find later. I forget if she said they were going out of business or were sold out to someone else. So, not sure if she is correct, but I do find here that Presto seals and parts are much easier to locate.

 

Raspberry pie filling or glaze is wonderful. Made some more as a glaze, not as thick as pie filling. My dh is gobbling it up on icecream. So lovely tasting. Wish I could eat it.

 

The potatoes are great. More firm, so good for adding to chicken pot pie, etc. They did not fall apart. The liquid looks more cloudy, but is fine.

 

Green beans are good pickled, if you like that sort of thing. I can mine plain and use in soups, casseroles, etc. ( Just as a safety note, it is not safe to add bacon to the jars, too much fat and can support botulism) If I can homemade veggie soup some of the green beans go into the soup.

Hi all! Haven't been on much lately, been too busy with grapes and apricots! Both of which have been canned, jammed, and canned some more! Both dehydrators have been going 24 hours a day as well and I plan on putting up some more plain apricots this evening. Hope I get them done before the attack of the tomatoes!

BTW, Violet, thanks again for the marinated mushroom recipe! My family absolutely loves the things!

Mish - my family really enjoys the pickled green beans in the Ball Book. I like them but find them a bit salty.

 

Violet - is it possible to safely reduce the salt in that recipe?

(and let me tell you, it took HOURS to pick enough for jam and a couple of pies and batch of muffins, but it was worth it!)

Yeah, I knew that about the Mirros. *headdesk* Never post BEFORE coffee!

So, going with the Presto double-stack then.

I'll definitely get the weight-gauge. That's what I have now, and considering what it took me to figure that out, I'll just go with it! LOL

 

Yum....pickled green beans....

That does sound like a nice change.

Well, time to pull out the Book and try a test batch on the Manlings. Doesn't matter what I think if they won't eat it!

Yesterday I canned 6 quarts of Darlene's Chicken Soup, 1 quart of shredded chicken with broth (to make chicken and rice), and 8 pints of chicken broth.

I finally get to post here! YAY! Nytehunter and I made 13 1/2 jars of strawberry jam today. I haven't canned anything since my Mother Died 6 years ago so both of us had a few missing Mom momments, but it was a lot of fun! The best part is every single jar sealed AND it already looks nice and thick. :D Nytehunter said it looked like we had enough for the whole winter, but I'm already having trouble keeping the kids out of it so I think I'm going to do some sour cherry jam and the black raspberry next that way we will have enough! I forgot how much I love to can.

 

I have to thank PoGo again for the book it made life much easier to get back in the canning swing! THANK YOU POGO!!!

Today I'm making a nice batch of Chile Con Carne and should end up with about 16 pints by the time I'm finished. Then, if the weather doesn't get too much hotter -- no air conditioning -- I will be making cherry jam from a large ziplock bag of already pitted cherries that I was given.

I canned 8 half-pints of strawberry preserves today. I had only canned once before and that was 5 years ago so it was like doing it for the first time almost. I am very excited! I keep going into the kitchen to look at my cute little jars of preserves. I feel so proud of myself for doing it. That probably sounds crazy to all you experienced canners.
