I hope Lucky Charms are considered 'southern food' cause while I was napping, DB came in and ate my bowl of hambone soup, so I hade to make a little change in dinner menu!!LOL

I'm new here and I love these dinner threads. I've been trying to put together a menu options list because my mind goes blank when I'm trying to come up with ideas. I hope you keep it going. I spent a long time the other night going through some of them. Great ideas.

I really need to get myself more organized. And get back to my menu plans. Things go much smoother when Mike and the kids have something to go off of. They don't mind cooking for themselves if'n they have an idea. Everyday my husband calls and says what did you lay out for supper? Ummm I went to work at 12pm yesterday and didn't get home until 9:30.. Needless to say nothing was laid out. They ended up with a pick 3 bucket from Walmart. It's getting cooler so I think some soups in the crockpot are in order.

 

What's your favorite crockpot soup or meal? :gathering:

A group of friends is gathering at my house and after an easy supper we'll go to a comedy/musical "How to Succeed in Business Without Really Trying", then return to my house for dessert and drinks. Fun times!

I think I've mentioned before that DH is on a low-carb thing right now. I look at the rice and beans and potatoes and just shake my head. :shakinghead:

 

Well, no carbs = no pasta, so I used eggplant to make "Eggplant Lasagna". http://www.cooks.com/rec/view/0,1935,155180-248192,00.html

 

I cut it in half, added hamburger to the sauce, and it still made a lot.

 

I missed the pasta. The eggplant was ok, it tasted ok, but it cooked up "slimy" and the entire thing just didn't have the lasagna "body" that we like. :(

 

 

I need cheesecake... <_<

Yesterday's was pot roast with onions and barley. No leftovers. Not a drop, not a grain, not a chip.

 

Today I had a twice-baked potato for lunch. Supper was pork fried rice and sweet potatoes. I'll have the leftovers for lunch tomorrow, if my nerves let me eat and if someone doesn't raid the fridge after I go to bed.

 

Tomorrow, my dh is planning rotisserie chicken, with barley cooked in the chicken drippings, and baby limas. Limas seem to have an affinity for chicken, like sweet potatoes do with pork, and onions with beef. Does anyone else have favorite pairings like that?

 

This might be a good weekend to make lasagne. I haven't done that in a while. Or soup. Maybe a hearty vegetable soup served with lots of crunchy yellow cornbread.

EZ Goulash

 

Used penne pasta (sorry Cat- *necie ducks*). Brown # of ground beef, add a jar of speghetti sauce and mix. I always add some Velveeta-type cheese to the sauce and mix in to melt--kids always liked it. ;) Mix drained pasta with sauce. VOILA! :)

 

Then DH made Cheeeezy Popcorn for dessert. Just pop popcorn then shake in a paper sack with a packet of powdered cheese outa one of those cheap mac 'n' cheese boxes. (Use maccaroni for something else.)

8 pounds of pot roast (I wanted leftovers to freeze), potatoes&carrots&celery, and gravy all in the pressure cooker.

 

Served it with leftover French Bread.

 

Now I have a really happy DH!!! :D AND meat for future meals!!! :feedme:

At work today we had a birthday party. Sweet potato soup, sandwiches, and this:

 

Kidney Beans with Cheese Soup

(from class at Ohio State University – Home Economics House)

3 bacon slices

1 cup coarsely chopped onion

2 cans (1 pound size) kidney beans, drained

1-1/2 teaspoon chili powder

1 can (1 pound 3oz) tomatoes, undrained

1 teaspoon salt (optional)

1 cup grated sharp Cheddar cheese

Dash pepper

 

In large skillet, sauté bacon until crisp. Remove; drain; crumble and set aside. Cook onions in bacon fat until tender (10 minutes). Add everything except the cheese and bacon. Cook, uncovered, on low about 20 minutes. Stir in and melt cheese. Serve with bacon sprinkled over top.

Hi all, I had something good for dinner last night and thought I'd share it with my MrsS buddies. :)

Naturally, I had to 'make it my own' and apply a few changes.

 

So very simple and I was impressed with how good it was!

 

I added chopped Bellpepper which we like in dumplings and use chicken broth instead of water...also tripled the recipe for my XL family! Enjoy!

Last night we had an orange chicken salad. Tonight we're having steak salad with a side of homemade baked beans (new recipe,it's been baking for 5 hours now so should be done soon).

 

Night before that it was chile made with leftover pork roast.

 

Tomorrow is *supposed* to be red chile chicken with black beans from Mexican Everyday, but we might go to The China Buffet for lunch and then not want dinner.

Saturday lunch had ham with those big white lima beans I've always called butter beans. I was sharply told they were NOT butter beans. Also had sliced tomato. For dinner, cheese toast and the rest of the tomato.

 

Sunday, lamb with onions and barley. Lamb neck makes really good stew. For dinner, clean the pot.

 

Several families came to share the fireplace last night, arriving between ten and midnight. We lost electricity for a while, too, but with 19 people in the house it stayed warm enough. I left for the office before the pancake brigade started up. Luckily, this means I left before the toilet stopped up. I discovered I do NOT miss having a nine-month-old in bed with me.

 

Tonight, my sons are making some kind of baked pasta dish.

Cold, snowy day. Despite his low-carb diet, DH thought my homemade "from scratch" macaroni and cheese sounded soooooo good! So I fixed it for us, and he's right... it hit the spot. :feedme:

 

DS and liDD don't care for it as much as they like the creamy stovetop mixes, but they had no choice. LOL

 

I put in 4 different cheeses, using up some leftovers and some for the taste. I added swiss, colby, bacon-bits-in-a-mild-yellow-cheese, and some Parmesan. OH... I guess it was 5 kinds... I threw in some aged cheddar that I had shredded earlier.

 

 

YUM....

That macaroni and cheese sounds lovely. I am off milk products until my cough eases up, but that is now sitting at the back of my mind. Dinner yesterday was pretty much broth and noodles. Lunch scrambled eggs and toast. Dinner probably broth and noodles with less chili powder, more garlic.

Started a big pot of Chicken, veggie and rice soup at 5:15 this morning. Getting ready to make biscuits shortly and an app recipe I found for jalapeno crescent roll bites. Don't need dessert--I bought half a flat +1 pint of strawberries for $6.

I made a big pot of sloppy joes. Smells good in here !!

 

 

The recipe you posted for canning does smell and taste so good! My Presto would only hold 9 pints, so we had enough left for supper. DS enjoyed it, so last night after I went to bed, he decided to open a jar for himself. He remarked this morning that it was 'ok', but I had cooked it too long in the pressure cooker! I had to tell him that you don't choose how long you want to cook it, that you go by a set amount of time so that it will be safe to eat. I made mine using turkey, and it looked darker after it pressured. I think the color threw him off. I'm having a lot of stomach problems..only can eat bland yogurt, oatmeal and such, so I can't try it yet. It must have been a little better than 'ok' though, because he managed to eat the whole pint by himself lol!!!!!!!!! (It smelled so good before I put it in the jar, I tried a small amount on a cracker and it was the best sloppy joe I have ever tasted. I can't wait to be able to eat some.) Thanks for the recipe!

White beans with ham from the freezer, cornbread made with corn meal from December 2006, a big slice of onion, and homemade peach cobbler with peaches from 2008. Yum!!

 

Here is the recipe I use for the cobbler.

 

Cobbler in a Hurry

 

½ Cup Butter or one stick

1 Cup Self Rising Flour or 1 ½ Cups

1 Cup Sugar

1 Cup Milk or Cream

1 Can or Jar of Pie Filling

 

Take a 9x13 baking dish, put butter in it and put in the oven to melt while mixing the batter.

 

In a mixing bowl, mix flour, sugar, & milk. Remove baking dish from oven and pour in batter. Pour pie filling into the center of the baking dish. (The batter will cover it as it rises.) Bake about 25 minutes, or until golden brown on top at 350.

Wormguy, your dinner sounds great and so does the cobbler recipe!!! We had Italian sausage sandwiches with green peppers and onions in the crockpot, fresh corn on the cob and homemade Oatmeal cookies with white choc chips, dried cranberries and almond slices.

Well, both crock pots are full of different types of beans (I've been craving them lately), so it's looking like crockpot "baked" beans, grilled chicken breast, spinach from the garden, and leftover homemade french bread from last night. If anyone wants dessert, they can grab some cut up watermelon in the fridge.
